Carrot Cake for Breakfast… Don’t Mind If I Do!
This might be the real reason I stopped baking so much—now that all my kids are grown and out of the house, the sweets are left for Tim and me alone to devour… and we absolutely would! But there’s truly nothing quite like a freshly baked pastry or dessert with a hot cup of coffee to get your day going.
I was thrilled to be home on a stormy day, enjoying a three-day weekend thanks to Christopher Columbus. That one extra day makes all the difference—it felt like I gained a whole week's worth of home time. I managed to be productive with household chores, but never even got dressed. With the rain pouring down all day, there was no going out anyway, so I fully embraced my cozy PJ day.
I was deep into putting away clean clothes, but I kept circling back to that darn cake throughout the day—just a bite or two here and there… until it was gone. Thankfully, I had only taken home a couple of pieces, which forced some restraint. Maybe I need to invest in mini cake pans. That way, instead of one big cake, I can make a half-dozen mini cakes—keep one, and give the rest away. We could still enjoy our treats without going overboard and no doubt my friends and family would be happy.
With the holidays coming up, we’re heading into serious baking season. There are certain treats I only make once a year, but everyone has their favorites—and they’re counting on me for them.
Next weekend, I’ll be in Florida visiting Dawn, soaking up some sunshine and dining out like a rockstar. Packing is already underway. Figuring out what to bring is always a bit of a challenge, but luckily I have a stash of clothes there to fall back on each visit.
Looking ahead, I’m feeling inspired to bring a little more balance to my baking—more joy, fewer leftovers! Sometimes, it’s those simple, sweet moments that make life feel just right.
