Got eggs?

The weather still hasn’t quite warmed up enough for it to feel like spring, but the chickens have certainly picked up the pace. They’re laying more eggs than our household could ever eat. I’ve given many away, a dozen fresh eggs makes such a fun gift, and I’ve sold a few dozen too, but they’re still coming at me fast and furious.
Tim doesn’t eat eggs at all, and while I do, there’s only so many one person can eat. I finally understand why people set up those little egg stands on the side of the road, but I’m not quite ready to launch another entrepreneurial venture. Every once in a blue moon, I’ll post on Facebook that I have eggs for sale, and suddenly I’m inundated with more requests than I can handle. So where’s the happy medium?
Selling a few dozen each week helps offset the cost of feed, and I’ve built up a handful of regular customers. But if they skip a week, I’m left staring at piles of eggs on the counter. I suppose there are worse problems to have, with this setup, I’ll never go hungry, but I’d hate to see these little hard-shelled miracles go to waste.
As spring unfolds, I’m sure I’ll eventually come up with a plan for all these eggs.
On another note, my new deck table was delivered, complete with “some assembly required.” I can’t wait to see the new setup come together, although the chairs still aren’t ready for pickup yet. Fingers crossed they arrive by the weekend.
If the weather warms up, the table gets assembled, and the chairs finally make it home, it might just be the perfect excuse for a little deck get-together: Mahjong, dinner, egg salad sandwiches… and, naturally, a side of deviled eggs.
